Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Parmesan cheese - 20 grams, grated
  • Fresh basil - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam until tender, about 8-10 minutes.
  3. Once steamed, transfer the cauliflower to a clean kitchen towel and squeeze out excess moisture.
  4. In a large bowl, mash the cauliflower until smooth.
  5. Add almond flour, egg, salt, garlic powder, nutmeg, and grated Parmesan to the mashed cauliflower. Mix until a dough forms.
  6. On a floured surface, divide the dough into four pieces and roll each piece into a long rope about 1 cm thick.
  7. Cut the ropes into 2 cm pieces to form gnocchi.
  8. Bring a large pot of salted water to a boil, and gently add the gnocchi. Cook until they float to the surface, about 2-3 minutes.
  9. Using a slotted spoon, remove the gnocchi and let them drain.
  10. In a skillet, heat olive oil over medium heat. Add the gnocchi and sauté for 3-4 minutes until golden.
  11. Serve with fresh basil on top and enjoy!
