- Cauliflower - 300 grams
- Almond flour - 100 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Parmesan cheese - 20 grams, grated
- Fresh basil - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into florets and steam until tender, about 8-10 minutes.
- Once steamed, transfer the cauliflower to a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, mash the cauliflower until smooth.
- Add almond flour, egg, salt, garlic powder, nutmeg, and grated Parmesan to the mashed cauliflower. Mix until a dough forms.
- On a floured surface, divide the dough into four pieces and roll each piece into a long rope about 1 cm thick.
- Cut the ropes into 2 cm pieces to form gnocchi.
- Bring a large pot of salted water to a boil, and gently add the gnocchi. Cook until they float to the surface, about 2-3 minutes.
- Using a slotted spoon, remove the gnocchi and let them drain.
- In a skillet, heat olive oil over medium heat. Add the gnocchi and sauté for 3-4 minutes until golden.
- Serve with fresh basil on top and enjoy!
