Ingredients

  • Cauliflower - 300 grams (about 1 small head, riced)
  • Carrot - 50 grams (1 small, diced)
  • Green peas - 50 grams (1/3 cup, frozen or fresh)
  • Green onion - 2 stalks (sliced)
  • Garlic - 2 cloves (minced)
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Egg - 1 large (lightly beaten)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by ricing the cauliflower using a food processor or grater until it resembles rice grains.
  2. In a large skillet or wok, heat olive oil over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrot and green peas to the skillet, cooking for about 3-4 minutes until tender.
  4. Push the vegetables to one side of the skillet and pour the beaten egg onto the other side. Scramble the egg until fully cooked, then mix it with the vegetables.
  5. Add the riced cauliflower to the skillet, along with soy sauce and sesame oil. Stir to combine everything and cook for an additional 5-7 minutes, until the cauliflower is tender but not mushy.
  6. Stir in the sliced green onion and season with salt and pepper to taste. Cook for another minute before removing from heat.
  7. Serve hot, garnished with additional green onions if desired.
