- Green peas - 50 grams (1/3 cup, frozen or fresh)
- Green onion - 2 stalks (sliced)
- Garlic - 2 cloves (minced)
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Egg - 1 large (lightly beaten)
- Salt - to taste
- Black pepper - to taste
Steps
- Start by ricing the cauliflower using a food processor or grater until it resembles rice grains.
- In a large skillet or wok, heat olive oil over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
- Add the diced carrot and green peas to the skillet, cooking for about 3-4 minutes until tender.
- Push the vegetables to one side of the skillet and pour the beaten egg onto the other side. Scramble the egg until fully cooked, then mix it with the vegetables.
- Add the riced cauliflower to the skillet, along with soy sauce and sesame oil. Stir to combine everything and cook for an additional 5-7 minutes, until the cauliflower is tender but not mushy.
- Stir in the sliced green onion and season with salt and pepper to taste. Cook for another minute before removing from heat.
- Serve hot, garnished with additional green onions if desired.
