Ingredients
- Cauliflower - 1 large head
- All-purpose flour - 1 cup (120g)
- Cornstarch - 1/4 cup (30g)
- Baking powder - 1 tsp
- Garlic powder - 1 tsp
- Smoked paprika - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Cold sparkling water - 1 cup (240ml)
- Breadcrumbs - 1 cup (100g)
- Potatoes - 2 medium (about 300g)
- Olive oil - 2 tbsp (30ml)
- Lemon wedges - for serving
- Tartar sauce (vegan) - for serving
Steps
- Preheat the oven to 220°C (425°F).
- Wash and cut the potatoes into thick fries. Soak them in cold water for 15 minutes to remove excess starch.
- Drain and pat the potatoes dry, then toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper.
- Spread the fries on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through until golden and crispy.
- While the fries are baking, prepare the cauliflower. Cut the cauliflower into thick 'steaks' or florets.
- In a mixing bowl, combine the flour, cornstarch, baking powder, garlic powder, smoked paprika, salt, and black pepper.
- Gradually whisk in the cold sparkling water until the batter is smooth and thick.
- Dip each cauliflower piece into the batter, allowing excess to drip off, then coat in breadcrumbs.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the battered cauliflower in batches for 3-4 minutes on each side, until golden and crispy.
- Once cooked, remove the cauliflower from the skillet and place on a paper towel to drain excess oil.
- Serve the crispy cauliflower with the baked fries, lemon wedges, and vegan tartar sauce.
