Ingredients

  • Cauliflower - 1 large head
  • All-purpose flour - 1 cup (120g)
  • Cornstarch - 1/4 cup (30g)
  • Baking powder - 1 tsp
  • Garlic powder - 1 tsp
  • Smoked paprika - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Cold sparkling water - 1 cup (240ml)
  • Breadcrumbs - 1 cup (100g)
  • Potatoes - 2 medium (about 300g)
  • Olive oil - 2 tbsp (30ml)
  • Lemon wedges - for serving
  • Tartar sauce (vegan) - for serving

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Wash and cut the potatoes into thick fries. Soak them in cold water for 15 minutes to remove excess starch.
  3. Drain and pat the potatoes dry, then toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper.
  4. Spread the fries on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through until golden and crispy.
  5. While the fries are baking, prepare the cauliflower. Cut the cauliflower into thick 'steaks' or florets.
  6. In a mixing bowl, combine the flour, cornstarch, baking powder, garlic powder, smoked paprika, salt, and black pepper.
  7. Gradually whisk in the cold sparkling water until the batter is smooth and thick.
  8. Dip each cauliflower piece into the batter, allowing excess to drip off, then coat in breadcrumbs.
  9. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the battered cauliflower in batches for 3-4 minutes on each side, until golden and crispy.
  10. Once cooked, remove the cauliflower from the skillet and place on a paper towel to drain excess oil.
  11. Serve the crispy cauliflower with the baked fries, lemon wedges, and vegan tartar sauce.
