Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Almond flour - 60 grams
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Bell pepper (sliced) - 50 grams
  • Red onion (sliced) - 50 grams
  • Spinach (fresh) - 30 grams
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam them until tender, about 8-10 minutes.
  3. Once cooked, transfer the cauliflower to a clean kitchen towel and squeeze out excess moisture until the cauliflower is as dry as possible.
  4. In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  7. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  8. Top with sliced bell peppers, red onion, and fresh spinach. Sprinkle additional mozzarella cheese if desired.
  9. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Allow to cool for a few minutes before slicing and serving.
