Ingredients

  • Cattail roots - 200 grams

  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by thoroughly washing the cattail roots to remove any dirt or debris, then peel and chop them into small pieces.
  2. In a medium pot, heat the olive oil over medium heat and add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  3. Add the chopped cattail roots to the pot and stir for another 2-3 minutes until they begin to soften.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let simmer for 20 minutes.
  5. After 20 minutes, add the coconut milk and fresh thyme, then season with salt and black pepper to taste. Simmer for an additional 5 minutes.
