- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Begin by thoroughly washing the cattail roots to remove any dirt or debris, then peel and chop them into small pieces.
- In a medium pot, heat the olive oil over medium heat and add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Add the chopped cattail roots to the pot and stir for another 2-3 minutes until they begin to soften.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let simmer for 20 minutes.
