- Carrots - 300 grams, peeled and chopped
- Eggs - 2 large
- Milk - 60 ml
- Olive oil - 1 tablespoon
- Honey - 1 tablespoon
- All-purpose flour - 2 tablespoons
- Baking powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F) and grease two ramekins with olive oil.
- In a pot, boil the chopped carrots in salted water until tender, about 15 minutes. Drain and let them cool slightly.
- In a blender, combine the cooked carrots, eggs, milk, honey, olive oil, baking powder, salt, pepper, and nutmeg. Blend until smooth.
- In a mixing bowl, combine the blended carrot mixture with the flour, stirring until just combined.
- Pour the mixture evenly into the prepared ramekins and smooth the tops.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 25-30 minutes, or until the soufflés are puffed and set.
- Remove them from the oven and let them cool for a few minutes before serving.
