  • Carrots - 300 grams, peeled and chopped
  • Eggs - 2 large
  • Milk - 60 ml
  • Olive oil - 1 tablespoon
  • Honey - 1 tablespoon
  • All-purpose flour - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and grease two ramekins with olive oil.
  2. In a pot, boil the chopped carrots in salted water until tender, about 15 minutes. Drain and let them cool slightly.
  3. In a blender, combine the cooked carrots, eggs, milk, honey, olive oil, baking powder, salt, pepper, and nutmeg. Blend until smooth.
  4. In a mixing bowl, combine the blended carrot mixture with the flour, stirring until just combined.
  5. Pour the mixture evenly into the prepared ramekins and smooth the tops.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake in the preheated oven for 25-30 minutes, or until the soufflés are puffed and set.
  8. Remove them from the oven and let them cool for a few minutes before serving.
