  • Pork shoulder - 500 grams
  • Apple cider vinegar - 120 ml
  • Brown sugar - 30 grams
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Water - 240 ml
  • Gluten-free barbecue sauce - 60 ml
  • Coleslaw mix - 200 grams
  • Mayonnaise - 30 grams
  • Apple cider vinegar (for slaw) - 15 ml
  • Salt (for slaw) - 1/4 teaspoon
  • Black pepper (for slaw) - 1/4 teaspoon

Steps

  1. In a medium bowl, mix together the apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create a marinade.
  2. Place the pork shoulder in a slow cooker and pour the marinade over it. Add 240 ml of water to the slow cooker.
  3. Cover and cook on low for 6-8 hours or until the pork is tender and easily shredded.
  4. Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix in 60 ml of gluten-free barbecue sauce until well combined.
  5. In a separate bowl, combine the coleslaw mix, mayonnaise, 15 ml of apple cider vinegar, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss until evenly coated.
  6. Serve the pulled pork on a plate with a generous serving of coleslaw on the side.
