- Apple cider vinegar - 120 ml
- Brown sugar - 30 grams
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Water - 240 ml
- Gluten-free barbecue sauce - 60 ml
- Coleslaw mix - 200 grams
- Mayonnaise - 30 grams
- Apple cider vinegar (for slaw) - 15 ml
- Salt (for slaw) - 1/4 teaspoon
- Black pepper (for slaw) - 1/4 teaspoon
Steps
- In a medium bowl, mix together the apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create a marinade.
- Place the pork shoulder in a slow cooker and pour the marinade over it. Add 240 ml of water to the slow cooker.
- Cover and cook on low for 6-8 hours or until the pork is tender and easily shredded.
- Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix in 60 ml of gluten-free barbecue sauce until well combined.
- In a separate bowl, combine the coleslaw mix, mayonnaise, 15 ml of apple cider vinegar, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss until evenly coated.
- Serve the pulled pork on a plate with a generous serving of coleslaw on the side.
