Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Apple cider vinegar - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • BBQ sauce - 1/4 cup
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt. Toss well to coat the chickpeas evenly.
  3. Spread the seasoned chickpeas on a baking sheet lined with parchment paper and bake for 20 minutes, stirring halfway through, until they are slightly crispy.
  4. In a small saucepan, mix together the apple cider vinegar, maple syrup, and BBQ sauce. Heat over low heat until warmed through.
  5. Once the chickpeas are done baking, remove them from the oven and drizzle the warm BBQ sauce mixture over them, tossing to coat evenly.
  6. Return the chickpeas to the oven for an additional 5 minutes to allow the sauce to caramelize slightly.
  7. Remove from the oven, garnish with chopped parsley, and serve hot.
