  • Canned kidney beans - 1/2 cup (120g), drained and rinsed
  • Coconut milk - 1 cup (240ml)
  • Vegetable broth - 1/2 cup (120ml)
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Scotch bonnet pepper - 1 small, whole (optional for heat)

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the coconut milk, vegetable broth, chopped green onion, minced garlic, dried thyme, allspice, salt, and black pepper.
  3. Bring the mixture to a boil over medium heat.
  4. Add the rinsed rice and kidney beans to the saucepan, stirring well to combine.
  5. If using, add the whole scotch bonnet pepper to the mixture for added heat (do not cut it).
  6. Reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice and peas with a fork, remove the scotch bonnet pepper, and serve hot.
