- Coconut milk - 1 cup (240ml)
- Vegetable broth - 1/2 cup (120ml)
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Scotch bonnet pepper - 1 small, whole (optional for heat)
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the coconut milk, vegetable broth, chopped green onion, minced garlic, dried thyme, allspice, salt, and black pepper.
- Bring the mixture to a boil over medium heat.
- Add the rinsed rice and kidney beans to the saucepan, stirring well to combine.
- If using, add the whole scotch bonnet pepper to the mixture for added heat (do not cut it).
- Reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
- Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice and peas with a fork, remove the scotch bonnet pepper, and serve hot.
