  • Coconut milk - 200 ml
  • Vegetable broth - 250 ml
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2, diced
  • Fresh thyme - 1 teaspoon, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Fresh cilantro - for garnish

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until soft, about 5 minutes.
  2. Add minced garlic, cumin, paprika, salt, and black pepper to the pot. Stir and cook for an additional 1-2 minutes until fragrant.
  3. Stir in the brown rice, followed by the vegetable broth and coconut milk. Bring to a boil, then reduce the heat to low and cover.
  4. Simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid. If needed, add a splash more broth or water.
  5. Once cooked, gently fold in the rinsed black beans and fresh thyme. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat, stir in lime juice, and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh cilantro.
