- Vegetable broth - 250 ml
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Bell pepper - 1/2, diced
- Fresh thyme - 1 teaspoon, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Lime - 1, juiced
- Fresh cilantro - for garnish
Steps
- In a medium pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until soft, about 5 minutes.
- Add minced garlic, cumin, paprika, salt, and black pepper to the pot. Stir and cook for an additional 1-2 minutes until fragrant.
- Stir in the brown rice, followed by the vegetable broth and coconut milk. Bring to a boil, then reduce the heat to low and cover.
- Simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid. If needed, add a splash more broth or water.
- Once cooked, gently fold in the rinsed black beans and fresh thyme. Cook for an additional 2-3 minutes to heat through.
- Remove from heat, stir in lime juice, and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
