Ingredients

  • Black beans - 240 grams, drained and rinsed
  • Quinoa - 100 grams, uncooked
  • Jerk seasoning - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Bell pepper - 50 grams, finely chopped
  • Breadcrumbs - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Burger buns - 2
  • Ripe mango - 1, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Cook the quinoa according to package instructions; set aside to cool.
  2. In a large mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  3. Add the cooked quinoa, jerk seasoning, minced garlic, chopped red onion, chopped bell pepper, breadcrumbs, olive oil, salt, and pepper to the bowl. Mix until well combined.
  4. Form the mixture into two burger patties.
  5. Preheat a grill or skillet over medium heat. Lightly oil the surface if needed.
  6. Cook the burger patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  7. While the patties are cooking, prepare the mango salsa by combining diced mango, chopped cilantro, lime juice, and a pinch of salt in a bowl.
  8. Toast the burger buns on the grill or in a toaster until golden.
  9. Assemble the burgers by placing each patty on a bun and topping with mango salsa. Serve immediately.
