- Black beans - 240 grams, drained and rinsed
- Quinoa - 100 grams, uncooked
- Jerk seasoning - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Bell pepper - 50 grams, finely chopped
- Breadcrumbs - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Burger buns - 2
- Ripe mango - 1, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Cook the quinoa according to package instructions; set aside to cool.
- In a large mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, jerk seasoning, minced garlic, chopped red onion, chopped bell pepper, breadcrumbs, olive oil, salt, and pepper to the bowl. Mix until well combined.
- Form the mixture into two burger patties.
- Preheat a grill or skillet over medium heat. Lightly oil the surface if needed.
- Cook the burger patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- While the patties are cooking, prepare the mango salsa by combining diced mango, chopped cilantro, lime juice, and a pinch of salt in a bowl.
- Toast the burger buns on the grill or in a toaster until golden.
- Assemble the burgers by placing each patty on a bun and topping with mango salsa. Serve immediately.
