Ingredients
- Puff pastry - 200 grams
- Onions - 2 medium (about 300 grams)
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large (for egg wash)
- Goat cheese - 100 grams (optional for topping)
Steps
- Preheat your oven to 200°C (400°F).
- Peel and thinly slice the onions.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook for about 20-25 minutes, stirring occasionally, until the onions are caramelized and golden brown.
- Add the thyme to the onions and stir well, cooking for an additional 2 minutes. Remove from heat and let cool slightly.
- Roll out the puff pastry on a lightly floured surface to fit a small tart pan (about 20 cm in diameter). Place the pastry in the pan and trim the edges.
- Prick the bottom of the pastry with a fork to prevent it from puffing up during baking.
- Spread the caramelized onions evenly over the pastry crust.
- If using, crumble the goat cheese over the onions.
- Beat the egg in a small bowl, and brush the edges of the pastry with the egg wash for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm.
