Ingredients

  • Puff pastry - 200 grams
  • Onions - 2 medium (about 300 grams)
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large (for egg wash)
  • Goat cheese - 100 grams (optional for topping)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and thinly slice the onions.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook for about 20-25 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  4. Add the thyme to the onions and stir well, cooking for an additional 2 minutes. Remove from heat and let cool slightly.
  5. Roll out the puff pastry on a lightly floured surface to fit a small tart pan (about 20 cm in diameter). Place the pastry in the pan and trim the edges.
  6. Prick the bottom of the pastry with a fork to prevent it from puffing up during baking.
  7. Spread the caramelized onions evenly over the pastry crust.
  8. If using, crumble the goat cheese over the onions.
  9. Beat the egg in a small bowl, and brush the edges of the pastry with the egg wash for a golden finish.
  10. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp.
  11. Remove from the oven and let cool for a few minutes before slicing. Serve warm.
