Ingredients

  • unsalted butter - 100 grams
  • granulated sugar - 100 grams
  • brown sugar - 50 grams
  • vanilla extract - 1 teaspoon
  • large eggs - 1
  • all-purpose flour - 75 grams
  • cocoa powder - 30 grams
  • salt - 1/4 teaspoon
  • pecans - 50 grams, chopped
  • sweetened condensed milk - 60 ml
  • light corn syrup - 30 ml
  • unsalted butter (for caramel) - 30 grams
  • vanilla extract (for caramel) - 1/2 teaspoon
  • sea salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish (about 20x20 cm).
  2. In a saucepan, melt 100 grams of unsalted butter over medium heat. Once melted, remove from heat and stir in both sugars until well combined.
  3. Add 1 teaspoon of vanilla extract and 1 egg to the butter-sugar mixture, whisking until smooth.
  4. In a separate bowl, sift together 75 grams of flour, 30 grams of cocoa powder, and 1/4 teaspoon of salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Fold in 50 grams of chopped pecans into the brownie batter.
  6. Pour the brownie batter into the prepared baking dish and spread it evenly.
  7. In a small saucepan for the caramel, combine 60 ml of sweetened condensed milk, 30 ml of light corn syrup, and 30 grams of unsalted butter. Cook over medium heat, stirring constantly until the mixture thickens and turns a light caramel color, about 5-7 minutes.
  8. Remove from heat and stir in 1/2 teaspoon of vanilla extract and a pinch of sea salt.
  9. Pour the caramel over the brownie batter and use a knife to swirl it gently into the top layer.
  10. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Let the brownies cool in the pan for at least 10 minutes before slicing into squares. Serve warm or at room temperature.
