- Coconut milk - 400 ml
- Silken tofu - 100 g
- Maple syrup - 60 ml
- Vanilla extract - 1 tsp
- Agar-agar powder - 1 tsp
- Brown sugar - 50 g
- Water - 30 ml
Steps
- In a small saucepan, combine the brown sugar and water over medium heat. Stir until the sugar dissolves and turns a golden caramel color. Remove from heat and pour the caramel into the bottom of two small ramekins, tilting to coat the bottom evenly.
- In a blender, combine the coconut milk, silken tofu, maple syrup, vanilla extract, and agar-agar powder. Blend until smooth and well combined.
- Pour the coconut mixture into a saucepan and heat over medium heat, stirring constantly until it comes to a gentle boil. Allow it to simmer for 2-3 minutes to activate the agar-agar, then remove from heat.
- Carefully pour the coconut mixture over the set caramel in the ramekins. Allow to cool to room temperature, then refrigerate for at least 2 hours to set.
- To serve, run a knife around the edges of the flan, invert onto a plate, and let the caramel drizzle over the top.
