Ingredients

  • All-purpose flour - 1 cup (120g)
  • Coconut oil - 1/3 cup (75g)
  • Cold water - 3-4 tablespoons (45-60ml)
  • Brown sugar - 1/4 cup (50g)
  • Granulated sugar - 1/4 cup (50g)
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Apples (peeled, cored, sliced) - 2 medium (about 300g)
  • Lemon juice - 1 tablespoon (15ml)
  • Cornstarch - 1 tablespoon (8g)
  • Maple syrup - 1/4 cup (60ml)
  • Vanilla extract - 1 teaspoon
  • Coconut cream - 1/4 cup (60ml)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the coconut oil and mix until crumbly. Gradually add cold water, one tablespoon at a time, until the dough holds together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat your oven to 180°C (350°F). In a large bowl, mix the sliced apples with lemon juice, brown sugar, granulated sugar, cinnamon, nutmeg, cornstarch, and vanilla extract. Let it sit for 10 minutes to marinate.
  3. Roll out the chilled dough on a floured surface to fit a small pie dish. Transfer the rolled dough to the pie dish and trim the edges. Pour the apple mixture into the crust evenly.
  4. To make the caramel, in a small saucepan, combine the maple syrup and coconut cream. Cook over medium heat, stirring constantly, until it thickens slightly, about 5-7 minutes. Remove from heat and let cool slightly.
  5. Drizzle half of the caramel over the apple filling. Bake the pie in the preheated oven for 25-30 minutes, or until the apples are tender and the crust is lightly golden.
  6. Once baked, remove the pie from the oven and let it cool for 10 minutes. Serve warm with the remaining caramel drizzled on top.
