- All-purpose flour - 1 cup (120g)
- Coconut oil - 1/3 cup (75g)
- Cold water - 3-4 tablespoons (45-60ml)
- Brown sugar - 1/4 cup (50g)
- Granulated sugar - 1/4 cup (50g)
- Cinnamon - 1 teaspoon
- Nutmeg - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Apples (peeled, cored, sliced) - 2 medium (about 300g)
- Lemon juice - 1 tablespoon (15ml)
- Cornstarch - 1 tablespoon (8g)
- Maple syrup - 1/4 cup (60ml)
- Vanilla extract - 1 teaspoon
- Coconut cream - 1/4 cup (60ml)
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the coconut oil and mix until crumbly. Gradually add cold water, one tablespoon at a time, until the dough holds together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat your oven to 180°C (350°F). In a large bowl, mix the sliced apples with lemon juice, brown sugar, granulated sugar, cinnamon, nutmeg, cornstarch, and vanilla extract. Let it sit for 10 minutes to marinate.
- Roll out the chilled dough on a floured surface to fit a small pie dish. Transfer the rolled dough to the pie dish and trim the edges. Pour the apple mixture into the crust evenly.
- To make the caramel, in a small saucepan, combine the maple syrup and coconut cream. Cook over medium heat, stirring constantly, until it thickens slightly, about 5-7 minutes. Remove from heat and let cool slightly.
- Drizzle half of the caramel over the apple filling. Bake the pie in the preheated oven for 25-30 minutes, or until the apples are tender and the crust is lightly golden.
- Once baked, remove the pie from the oven and let it cool for 10 minutes. Serve warm with the remaining caramel drizzled on top.
