- all-purpose flour - 1 cup (125g)
- granulated sugar - 1/2 cup (100g)
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- cinnamon - 1/2 tsp
- unsweetened applesauce - 1/4 cup (60ml)
- vegetable oil - 2 tbsp (30ml)
- milk - 1/4 cup (60ml)
- vanilla extract - 1 tsp
- apple - 1 medium (about 150g), peeled and diced
- caramel sauce - 2 tbsp (30ml)
Steps
- Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the applesauce, vegetable oil, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Fold in the diced apple gently until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool for 5 minutes in the pan before transferring them to a wire rack.
- Once cooled slightly, drizzle the caramel sauce over the top of each muffin and serve warm.
