Ingredients

  • all-purpose flour - 1 cup (125g)
  • granulated sugar - 1/2 cup (100g)
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • cinnamon - 1/2 tsp
  • unsweetened applesauce - 1/4 cup (60ml)
  • vegetable oil - 2 tbsp (30ml)
  • milk - 1/4 cup (60ml)
  • vanilla extract - 1 tsp
  • apple - 1 medium (about 150g), peeled and diced
  • caramel sauce - 2 tbsp (30ml)

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the applesauce, vegetable oil, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in the diced apple gently until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the muffins from the oven and let them cool for 5 minutes in the pan before transferring them to a wire rack.
  9. Once cooled slightly, drizzle the caramel sauce over the top of each muffin and serve warm.
