  • Ground cumin - 1 tsp
  • Coriander - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Egg - 1, beaten
  • Almond flour - 1/4 cup
  • Olive oil - 2 tbsp (for cooking)
  • Gluten-free burger buns - 2
  • Avocado - 1, sliced
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Pickles - 2 slices
  • Sriracha or your favorite sauce - for serving

Steps

  1. In a large bowl, combine cooked quinoa, black beans, grated carrot, diced red bell pepper, chopped green onion, minced garlic, ground cumin, coriander, salt, and black pepper.
  2. Mash the mixture slightly with a fork to combine, then add the beaten egg and almond flour. Mix until well combined.
  3. Form the mixture into 2 patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
  5. Toast the gluten-free burger buns in the skillet for 1-2 minutes until lightly crispy.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the veggie patty, sliced avocado, tomato, and pickles. Drizzle with Sriracha or your favorite sauce.
  7. Top with the other half of the bun and serve immediately.
