Ingredients

  • Kale - 150 grams, chopped
  • Yukon Gold potatoes - 200 grams, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the diced Yukon Gold potatoes and vegetable broth to the pot. Bring to a boil and then reduce to a simmer for about 15 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, use a potato masher to partially mash them for a creamy texture while leaving some chunks.
  5. Add the chopped kale, salt, black pepper, and red pepper flakes (if using) to the pot. Simmer for another 5 minutes until the kale is tender.
  6. Remove from heat and stir in the lemon juice before serving.
