  • Fresh parsley - 2 tablespoons, chopped
  • Cajun seasoning - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Plant-based milk - 1/3 cup
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the sweet corn, all-purpose flour, cornmeal, green onion, parsley, Cajun seasoning, garlic powder, salt, black pepper, and baking powder.
  2. Gradually add the plant-based milk to the dry ingredients, stirring until just combined. The mixture should be thick but pourable.
  3. Heat a non-stick skillet over medium heat and add enough olive oil to cover the bottom of the pan.
  4. Once the oil is hot, scoop about 2 tablespoons of the corn mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
  5. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
