- Sweet corn - 1 cup (fresh or canned)

- Cornmeal - 1/4 cup
- Green onion - 2 tablespoons, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Cajun seasoning - 1 tablespoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon (adjust to taste)
- Black pepper - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Plant-based milk - 1/3 cup
- Olive oil - for frying
Steps
- In a large bowl, combine the sweet corn, all-purpose flour, cornmeal, green onion, parsley, Cajun seasoning, garlic powder, salt, black pepper, and baking powder.
- Gradually add the plant-based milk to the dry ingredients, stirring until just combined. The mixture should be thick but pourable.
- Heat a non-stick skillet over medium heat and add enough olive oil to cover the bottom of the pan.
- Once the oil is hot, scoop about 2 tablespoons of the corn mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
- Serve warm with your favorite vegan dipping sauce.
