  • Olive oil - 2 tablespoons
  • Onion (diced) - 1 medium
  • Celery (diced) - 1 stalk
  • Bell pepper (diced) - 1 medium
  • Garlic (minced) - 3 cloves
  • Cajun seasoning - 1 tablespoon
  • Diced tomatoes (canned) - 200g
  • Chicken broth - 500ml
  • Heavy cream - 100ml
  • Green onions (sliced) - 2 for garnish
  • Salt - to taste
  • Pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and bell pepper, and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic and Cajun seasoning, cooking for another minute until fragrant.
  3. Add the diced tomatoes and chicken broth to the pot. Bring to a simmer and let it cook for 10 minutes to allow the flavors to meld.
  4. Add the shrimp to the pot and cook for 5-7 minutes, or until the shrimp are pink and cooked through.
  5. Reduce the heat to low and stir in the heavy cream. Cook for an additional 2-3 minutes, then season with salt, pepper, and lemon juice to taste.
  6. Serve hot, garnished with sliced green onions.
