Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Grits (preferably stone-ground) - 120 grams
  • Water - 1 liter
  • Heavy cream - 60 ml
  • Butter - 30 grams
  • Cajun seasoning - 2 teaspoons
  • Garlic (minced) - 2 cloves
  • Green onions (sliced) - 2 tablespoons
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring 1 liter of water to a boil and add a pinch of salt.
  2. Gradually stir in the grits, reduce heat to low, and cook for about 20 minutes, stirring occasionally, until creamy.
  3. In the last few minutes of cooking the grits, stir in the heavy cream, Parmesan cheese, and 10 grams of butter. Adjust seasoning with salt and pepper.
  4. While the grits are cooking, heat a skillet over medium heat and add the remaining 20 grams of butter.
  5. Once the butter has melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Add the shrimp to the skillet, sprinkle with Cajun seasoning, and cook for about 3-4 minutes until the shrimp turn pink and opaque.
  7. Stir in the sliced green onions and cook for an additional minute.
  8. To serve, spoon the creamy grits onto two plates and top with the Cajun shrimp mixture. Garnish with extra green onions if desired.
