  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Onion, diced - 1 small
  • Bell pepper, diced (any color) - 1/2 cup
  • Celery, diced - 1/2 cup
  • Garlic, minced - 2 cloves
  • Cajun seasoning - 1 tablespoon
  • Diced tomatoes - 1/2 cup
  • Green peas, frozen - 1/2 cup
  • Green onions, sliced - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat olive oil over medium heat. Add the diced onion, bell pepper, and celery, and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and Cajun seasoning, cooking for another minute until fragrant.
  3. Add the rice to the saucepan, stirring to coat it with the oil and vegetables for about 2 minutes.
  4. Pour in the vegetable broth and diced tomatoes, and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
