Ingredients

  • Brown rice - 1 cup
  • Chicken broth - 2 cups
  • Cajun seasoning - 1 tablespoon
  • Diced bell pepper (red and green) - 1/2 cup
  • Diced onion - 1/4 cup
  • Diced celery - 1/4 cup
  • Minced garlic - 2 cloves
  • Canned black beans - 1/2 cup, rinsed and drained
  • Cooked shredded chicken - 1/2 cup
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat olive oil over medium heat. Add diced onion, bell pepper, and celery, and sauté for about 5 minutes until softened.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Stir in the brown rice and Cajun seasoning, coating the rice with the vegetables and spices.
  4. Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 25 minutes or until the rice is tender and the liquid is absorbed.
  5. In the last 5 minutes of cooking, stir in the black beans and cooked shredded chicken to heat through.
  6. Remove from heat, fluff the rice with a fork, and stir in chopped parsley. Adjust salt and pepper to taste before serving.
