- Brown rice - 1 cup
- Chicken broth - 2 cups
- Cajun seasoning - 1 tablespoon
- Diced bell pepper (red and green) - 1/2 cup
- Diced onion - 1/4 cup
- Diced celery - 1/4 cup
- Minced garlic - 2 cloves
- Canned black beans - 1/2 cup, rinsed and drained
- Cooked shredded chicken - 1/2 cup
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat olive oil over medium heat. Add diced onion, bell pepper, and celery, and sauté for about 5 minutes until softened.
- Add minced garlic and sauté for another minute until fragrant.
- Stir in the brown rice and Cajun seasoning, coating the rice with the vegetables and spices.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 25 minutes or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, stir in the black beans and cooked shredded chicken to heat through.
- Remove from heat, fluff the rice with a fork, and stir in chopped parsley. Adjust salt and pepper to taste before serving.
