  • Red beans - 200 grams
  • Brown rice - 150 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, diced
  • Green bell pepper - 1, diced
  • Celery - 1 stalk, diced
  • Garlic - 3 cloves, minced
  • Cajun seasoning - 2 teaspoons
  • Olive oil - 2 tablespoons
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Green onions - for garnish, chopped

Steps

  1. Rinse the red beans and soak them in water for at least 4 hours or overnight.
  2. In a pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery, and sauté until softened, about 5 minutes.
