  • Olive oil - 1 tablespoon (15ml)
  • Onion - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 3 cloves, minced
  • Cajun seasoning - 1 tablespoon (15g)
  • Diced tomatoes - 1 cup (240g), canned
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, sliced (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, green bell pepper, and celery to the pot, cooking until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the soaked and drained red kidney beans, vegetable broth, diced tomatoes, Cajun seasoning, bay leaf, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes, or until the beans are tender.
  6. Remove the bay leaf and adjust seasoning if necessary.
