- Onion - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 4 cloves, minced
- Diced tomatoes - 200 grams, canned
- Chicken broth - 500 ml
- Cajun seasoning - 2 tablespoons
- Bay leaf - 1
- Okra - 100 grams, sliced
- Salt - to taste
- Black pepper - to taste
- Green onions - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced chicken and Andouille sausage and cook until browned, about 5-7 minutes.
- Add the diced onion, green bell pepper, and celery to the pot. Sauté until the vegetables are tender, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the diced tomatoes, chicken broth, Cajun seasoning, bay leaf, and bring to a boil. Reduce heat and let simmer for 20 minutes.
- Add the sliced okra and shrimp to the pot. Continue to simmer for another 10-15 minutes, until the shrimp are cooked through and the gumbo has thickened slightly.
- Season with salt and black pepper to taste. Remove the bay leaf before serving.
- Serve hot, garnished with chopped green onions.
