Ingredients

  • Long-grain white rice - 1 cup
  • Chicken broth - 2 cups
  • Ground beef - 150 grams
  • Andouille sausage, diced - 100 grams
  • Yellow onion, finely chopped - 1 medium
  • Celery, finely chopped - 1 stalk
  • Green bell pepper, finely chopped - 1/2
  • Garlic, minced - 2 cloves
  • Cajun seasoning - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion, celery, and green bell pepper, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Add the ground beef and Andouille sausage to the pot, breaking up the meat with a spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the Cajun seasoning, salt, and black pepper, mixing well to combine all the flavors.
  5. Add the rice to the meat mixture, stirring to coat the rice with the spices and meat.
  6. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and fluff the rice with a fork. Stir in the chopped parsley before serving.
