- Canned chickpeas - 400 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Cajun seasoning - 1 tablespoon
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- French baguette - 1 large (about 250 grams)
- Lettuce leaves - 4 large
- Tomato - 1 medium, sliced
- Pickles - 4 slices
- Red onion - 1/4 medium, thinly sliced
- Dijon mustard - 1 tablespoon
- Vegan mayonnaise - 2 tablespoons
- Hot sauce - to taste (optional)
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine the drained chickpeas, olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper. Mix well until the chickpeas are evenly coated.
- Spread the seasoned chickpeas on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until they are crispy and golden, stirring halfway through.
- While the chickpeas are roasting, prepare the remoulade by mixing together the vegan mayonnaise, Dijon mustard, and hot sauce (if using) in a small bowl. Set aside.
- Slice the baguette in half lengthwise and lightly toast it in the oven for the last 5 minutes of the chickpeas' cooking time.
- Once the chickpeas are done, assemble the Po' Boys by spreading the remoulade on both sides of the toasted baguette. Add a layer of lettuce, followed by roasted chickpeas, tomato slices, pickles, and red onion.
- Close the sandwich and slice it in half, then serve immediately.
