- cooked chickpeas - 1 cup (240g)
- breadcrumbs - 1/2 cup (60g)
- Cajun seasoning - 1 tablespoon (15g)
- garlic powder - 1 teaspoon (5g)
- onion powder - 1 teaspoon (5g)
- fresh parsley, chopped - 2 tablespoons (10g)
- olive oil - 2 tablespoons (30ml)
- lemon juice - 1 tablespoon (15ml)
- salt - 1/2 teaspoon (3g)
- black pepper - 1/4 teaspoon (1g)
- burger buns - 2
- lettuce leaves - 2
- tomato, sliced - 1
- avocado, sliced - 1/2
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the breadcrumbs, Cajun seasoning, garlic powder, onion powder, chopped parsley, olive oil, lemon juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two equal-sized patties, about 1 inch thick.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the burger buns in the same skillet until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and avocado. Top with the other half of the bun and serve immediately.
