Ingredients

  • cooked chickpeas - 1 cup (240g)
  • breadcrumbs - 1/2 cup (60g)
  • Cajun seasoning - 1 tablespoon (15g)
  • garlic powder - 1 teaspoon (5g)
  • onion powder - 1 teaspoon (5g)
  • fresh parsley, chopped - 2 tablespoons (10g)
  • olive oil - 2 tablespoons (30ml)
  • lemon juice - 1 tablespoon (15ml)
  • salt - 1/2 teaspoon (3g)
  • black pepper - 1/4 teaspoon (1g)
  • burger buns - 2
  • lettuce leaves - 2
  • tomato, sliced - 1
  • avocado, sliced - 1/2

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the breadcrumbs, Cajun seasoning, garlic powder, onion powder, chopped parsley, olive oil, lemon juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two equal-sized patties, about 1 inch thick.
  4. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, toast the burger buns in the same skillet until lightly golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and avocado. Top with the other half of the bun and serve immediately.
