  • Cajun seasoning - 2 tablespoons

  • Cornstarch - 1/4 cup

  • Egg - 1 large
  • Buttermilk - 1/2 cup
  • Vegetable oil - 1 cup (for frying)
  • French bread (sub rolls) - 2 pieces
  • Lettuce (shredded) - 1 cup
  • Tomato (sliced) - 1 medium
  • Pickles (sliced) - 1/4 cup
  • Remoulade sauce - 1/2 cup

Steps

  1. In a bowl, combine the flour, cornstarch, Cajun seasoning, salt, and black pepper to create the dredging mixture.
  2. In a separate bowl, whisk the egg and buttermilk together.
  3. Slice the chicken breast into thin pieces and marinate them in the buttermilk mixture for at least 15 minutes.
  4. Heat the vegetable oil in a deep skillet over medium-high heat.
  5. Remove the chicken from the buttermilk, allowing excess to drip off, then dredge each piece in the flour mixture, coating thoroughly.
  6. Carefully place the coated chicken pieces into the hot oil and fry until golden brown and cooked through, about 5-7 minutes. Flip halfway through.
  7. Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
  8. Slice the French bread rolls lengthwise without cutting all the way through.
