- 250g chicken breast, diced

- 2 cloves garlic, minced
- 200ml heavy cream
- 100g diced tomatoes (canned)
- 100g shredded mozzarella cheese
- 50g grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Steps
- Preheat your oven to 190°C (375°F).
- Cook the penne pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
- Add the minced garlic and diced chicken breast to the skillet, then sprinkle with Cajun seasoning. Cook until the chicken is browned and fully cooked, about 7-10 minutes.
- Stir in the diced tomatoes and heavy cream. Let the mixture simmer for 5 minutes to thicken slightly. Season with salt and pepper to taste.
- In a large mixing bowl, combine the cooked penne pasta with the chicken and sauce mixture until well coated.
