  • Cajun seasoning - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Season the chicken breast with Cajun seasoning, salt, and black pepper. Add the chicken to the skillet and cook for 5-7 minutes per side or until cooked through. Remove from skillet and let it rest.
  4. In the same skillet, add the diced onions and sauté for 2-3 minutes until translucent.
  5. Add the minced garlic and cook for another 1 minute until fragrant.
  6. Stir in the diced red and green bell peppers and cook for 3-4 minutes until softened.
  7. Slice the cooked chicken into strips and return it to the skillet.
  8. Pour in the heavy cream and bring to a gentle simmer. Add the cooked penne pasta and toss everything together to combine.
  9. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.
