- Cajun seasoning - 2 tablespoons

- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Season the chicken breast with Cajun seasoning, salt, and black pepper. Add the chicken to the skillet and cook for 5-7 minutes per side or until cooked through. Remove from skillet and let it rest.
- In the same skillet, add the diced onions and sauté for 2-3 minutes until translucent.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Stir in the diced red and green bell peppers and cook for 3-4 minutes until softened.
- Slice the cooked chicken into strips and return it to the skillet.
- Pour in the heavy cream and bring to a gentle simmer. Add the cooked penne pasta and toss everything together to combine.
- Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
