- Chicken thighs - 300 grams
- Cauliflower rice - 300 grams
- Olive oil - 2 tablespoons
- Cajun seasoning - 2 tablespoons
- Bell pepper (diced) - 1 medium (150 grams)
- Onion (diced) - 1 small (100 grams)
- Garlic (minced) - 2 cloves
- Chicken broth - 200 milliliters
- Salt - to taste
- Black pepper - to taste
- Green onions (sliced) - for garnish
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season the chicken thighs with Cajun seasoning, salt, and black pepper.
- Add the chicken thighs to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil, diced onion, and bell pepper. Sauté for 3-4 minutes until softened.
- Add minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in cauliflower rice and chicken broth, bringing the mixture to a simmer. Cook for about 5-7 minutes until the cauliflower is tender and the liquid has mostly evaporated.
- Return the cooked chicken thighs to the skillet, mixing them with the cauliflower rice. Cook for another 2 minutes to heat through.
- Serve hot, garnished with sliced green onions.
