Ingredients

  • Chicken thighs - 300 grams
  • Cauliflower rice - 300 grams
  • Olive oil - 2 tablespoons
  • Cajun seasoning - 2 tablespoons
  • Bell pepper (diced) - 1 medium (150 grams)
  • Onion (diced) - 1 small (100 grams)
  • Garlic (minced) - 2 cloves
  • Chicken broth - 200 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Green onions (sliced) - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with Cajun seasoning, salt, and black pepper.
  3. Add the chicken thighs to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil, diced onion, and bell pepper. Sauté for 3-4 minutes until softened.
  5. Add minced garlic and sauté for an additional 1 minute until fragrant.
  6. Stir in cauliflower rice and chicken broth, bringing the mixture to a simmer. Cook for about 5-7 minutes until the cauliflower is tender and the liquid has mostly evaporated.
  7. Return the cooked chicken thighs to the skillet, mixing them with the cauliflower rice. Cook for another 2 minutes to heat through.
  8. Serve hot, garnished with sliced green onions.
