Ingredients

  • Catfish fillets - 2 (150g each)
  • Olive oil - 2 tablespoons
  • Cajun seasoning - 2 teaspoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Bell pepper - 1 (sliced)
  • Zucchini - 1 (sliced)
  • Onion - 1/2 (sliced)

Steps

  1. In a small bowl, mix the Cajun seasoning, garlic powder, paprika, black pepper, and salt.
  2. Rub the spice mixture evenly over both sides of the catfish fillets.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  4. Add the catfish fillets to the skillet and cook for 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
  5. Remove the catfish from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil and sauté the sliced bell pepper, zucchini, and onion over medium heat for about 5-7 minutes, or until they are tender.
