Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Maple syrup - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Tomato paste - 2 tablespoons
  • Water - 3 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
  3. In a separate bowl, whisk together olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create a seasoning mix.
  4. Pour the seasoning mix over the cauliflower florets and toss until evenly coated.
  5. Spread the seasoned cauliflower on a baking sheet lined with parchment paper and roast in the preheated oven for 20-25 minutes, or until golden and tender, tossing halfway through.
  6. While the cauliflower is roasting, prepare the BBQ sauce by combining maple syrup, apple cider vinegar, tomato paste, and water in a small saucepan over medium heat.
  7. Stir the sauce continuously until it thickens slightly, about 5 minutes. Remove from heat.
  8. Once the cauliflower is done roasting, remove it from the oven and drizzle the BBQ sauce over the florets, tossing to coat evenly.
  9. Return the coated cauliflower to the oven for an additional 5 minutes to caramelize the sauce.
  10. Serve hot, garnished with fresh parsley if desired.
