Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Maple syrup - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Tomato paste - 2 tablespoons
- Water - 3 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
- In a separate bowl, whisk together olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create a seasoning mix.
- Pour the seasoning mix over the cauliflower florets and toss until evenly coated.
- Spread the seasoned cauliflower on a baking sheet lined with parchment paper and roast in the preheated oven for 20-25 minutes, or until golden and tender, tossing halfway through.
- While the cauliflower is roasting, prepare the BBQ sauce by combining maple syrup, apple cider vinegar, tomato paste, and water in a small saucepan over medium heat.
- Stir the sauce continuously until it thickens slightly, about 5 minutes. Remove from heat.
- Once the cauliflower is done roasting, remove it from the oven and drizzle the BBQ sauce over the florets, tossing to coat evenly.
- Return the coated cauliflower to the oven for an additional 5 minutes to caramelize the sauce.
- Serve hot, garnished with fresh parsley if desired.
