  • Green cabbage - 200 grams, chopped

  • Celery - 100 grams, diced
  • Onion - 50 grams, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Tomatoes - 200 grams, diced (canned or fresh)
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrots and celery, cooking for an additional 5 minutes until slightly softened.
  4. Add the chopped cabbage to the pot and stir well to combine.
  5. Pour in the vegetable broth and add the diced tomatoes, dried thyme, bay leaf, salt, and black pepper.
  6. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender.
