Cabbage Rolls

Ingredients

  • Green cabbage - 4 large leaves
  • Cooked brown rice - 1/2 cup
  • Cooked green lentils - 1/2 cup
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Bell pepper - 1/2, diced
  • Tomato sauce - 1 cup
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil and blanch the cabbage leaves for 2-3 minutes until they are softened. Remove and set aside to cool.
  2. In a skillet, heat olive oil over medium heat, add chopped onion and garlic, and sauté until translucent, about 5 minutes.
  3. Add the grated carrot and diced bell pepper to the skillet, cooking for another 3-4 minutes until tender.
  4. In a large bowl, combine the cooked brown rice, cooked lentils, sautéed vegetables, oregano, basil, salt, and black pepper. Mix well.
  5. Take one cabbage leaf and place about 1/4 cup of the filling at the base of the leaf. Fold in the sides and roll up tightly to form a packet. Repeat with remaining leaves and filling.
  6. Spread half of the tomato sauce on the bottom of a baking dish. Place the cabbage rolls seam-side down in the dish, then top with the remaining tomato sauce.
  7. Cover the dish with foil and bake in a preheated oven at 180°C (350°F) for 30 minutes. Remove the foil and bake for an additional 10 minutes.
  8. If using, sprinkle grated Parmesan cheese on top before serving.
