Cabbage Rolls

Ingredients
- Green cabbage - 4 large leaves
- Cooked brown rice - 1/2 cup
- Cooked green lentils - 1/2 cup
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Bell pepper - 1/2, diced
- Tomato sauce - 1 cup
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 2 tablespoons, grated (optional)
Steps
- Bring a large pot of salted water to a boil and blanch the cabbage leaves for 2-3 minutes until they are softened. Remove and set aside to cool.
- In a skillet, heat olive oil over medium heat, add chopped onion and garlic, and sauté until translucent, about 5 minutes.
- Add the grated carrot and diced bell pepper to the skillet, cooking for another 3-4 minutes until tender.
- In a large bowl, combine the cooked brown rice, cooked lentils, sautéed vegetables, oregano, basil, salt, and black pepper. Mix well.
- Take one cabbage leaf and place about 1/4 cup of the filling at the base of the leaf. Fold in the sides and roll up tightly to form a packet. Repeat with remaining leaves and filling.
- Spread half of the tomato sauce on the bottom of a baking dish. Place the cabbage rolls seam-side down in the dish, then top with the remaining tomato sauce.
- Cover the dish with foil and bake in a preheated oven at 180°C (350°F) for 30 minutes. Remove the foil and bake for an additional 10 minutes.
- If using, sprinkle grated Parmesan cheese on top before serving.
