- Long-grain white rice - 1 cup
- Ground beef (or turkey) - 200 grams
- Cabbage leaves - 4 large
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Tomato sauce - 1 cup
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
- Add the ground beef (or turkey) to the pot and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the paprika, salt, black pepper, and oregano. Mix well to combine.
- Add the rice to the pot, followed by the tomato sauce and vegetable broth. Stir everything together and bring to a simmer.
- While the mixture is simmering, carefully blanch the cabbage leaves in boiling water for 2-3 minutes until slightly softened. Remove and set aside.
- Once the rice mixture is simmering, reduce the heat to low, cover the pot, and let it cook for 20 minutes until the rice is tender and has absorbed most of the liquid.
- After 20 minutes, remove the pot from heat. If using, place a cabbage leaf on top of the rice mixture to serve. Garnish with fresh parsley before serving.
