Ingredients
- green cabbage - 200 grams, chopped
- bacon - 100 grams, diced
- yellow onion - 1 small, diced
- bell pepper - 1 medium, diced
- garlic - 2 cloves, minced
- eggs - 4 large
- olive oil - 1 tablespoon
- salt - to taste
- black pepper - to taste
- paprika - 1 teaspoon
- fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the fat in the skillet.
- Add the olive oil to the skillet with the bacon fat, then add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.
- Stir in the minced garlic and chopped cabbage, cooking for an additional 5-7 minutes until the cabbage is tender and slightly caramelized.
- Return the crispy bacon to the skillet and stir to combine. Season the mixture with salt, black pepper, and paprika.
- Make 4 small wells in the cabbage mixture, then crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your liking.
- Remove from heat, garnish with fresh parsley, and serve immediately.
