Ingredients

  • green cabbage - 200 grams, chopped
  • bacon - 100 grams, diced
  • yellow onion - 1 small, diced
  • bell pepper - 1 medium, diced
  • garlic - 2 cloves, minced
  • eggs - 4 large
  • olive oil - 1 tablespoon
  • salt - to taste
  • black pepper - to taste
  • paprika - 1 teaspoon
  • fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the fat in the skillet.
  2. Add the olive oil to the skillet with the bacon fat, then add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.
  3. Stir in the minced garlic and chopped cabbage, cooking for an additional 5-7 minutes until the cabbage is tender and slightly caramelized.
  4. Return the crispy bacon to the skillet and stir to combine. Season the mixture with salt, black pepper, and paprika.
  5. Make 4 small wells in the cabbage mixture, then crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your liking.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.
