Ingredients

  • Bacon - 100 grams
  • Green cabbage - 200 grams, chopped
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Eggs - 4 large

Steps

  1. In a large skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove bacon from the skillet and set aside, leaving the drippings in the pan.
  2. Add olive oil to the skillet, then add the diced onion and cook for 2-3 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the chopped cabbage to the skillet, stirring well to combine. Season with salt, black pepper, and red pepper flakes if using. Cook for about 5-7 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.
  5. Meanwhile, in a separate pan, fry the eggs to your liking (sunny-side up, over-easy, etc.).
  6. Once the cabbage is cooked, crumble the reserved bacon over the top and mix well.
  7. Serve the cabbage and bacon mixture on plates, topped with a fried egg on each serving.
