- Butternut squash - 300 grams, peeled and diced
- Vegetable broth - 500 milliliters
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Parmesan cheese - 50 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh sage - 4 leaves, chopped (optional)
Steps
- Preheat the oven to 200°C (400°F). Spread the diced butternut squash on a baking sheet, drizzle with 1 tablespoon of olive oil, season with salt and pepper, and roast for 25 minutes until tender.
- In a saucepan, heat the vegetable broth over low heat to keep it warm.
- In a large skillet, heat the remaining tablespoon of olive oil and the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and Arborio rice to the skillet, stirring for about 2 minutes until the rice is lightly toasted.
- Begin adding the warm vegetable broth, one ladle at a time, stirring continuously and allowing the rice to absorb the liquid before adding more. This process should take about 18-20 minutes until the rice is creamy and al dente.
- Stir in the roasted butternut squash, grated Parmesan cheese, and fresh sage (if using). Mix well and cook for an additional 2-3 minutes until heated through.
- Season with additional salt and pepper to taste. Serve immediately, garnished with extra Parmesan and sage leaves if desired.
