Ingredients
- all-purpose flour - 200 grams
- baking powder - 10 grams
- baking soda - 2 grams
- salt - 5 grams
- unsalted butter (cold, diced) - 50 grams
- buttermilk - 120 milliliters
- honey (optional) - 5 grams
Steps
- Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
- Add the cold diced butter to the flour mixture. Using your fingertips or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the buttermilk. If using, add the honey at this stage.
- Gently stir the mixture with a fork until just combined. Avoid overmixing to keep the biscuits tender.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Pat the dough into a rectangle about 2.5 cm thick. Use a biscuit cutter or a glass to cut out rounds, pressing straight down without twisting.
- Place the biscuits on the prepared baking sheet, ensuring they are close together for soft sides.
- Bake in the preheated oven for 12-15 minutes, or until they are golden brown on top.
- Remove from the oven and let cool slightly before serving warm.
