- BBQ sauce - 100 grams
- Apple cider vinegar - 15 ml
Steps
- Preheat your smoker or grill to 110°C (225°F).
- In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, and salt to create the rub.
- Trim excess fat from the brisket point, then coat it liberally with the spice rub, ensuring all sides are covered. Let it rest at room temperature for about 30 minutes.
- Place the brisket in the smoker or on the grill and cook for about 4 hours, or until the internal temperature reaches 90°C (195°F).
- Remove the brisket from the heat and let it rest for 30 minutes, then cut it into 2.5 cm (1 inch) cubes.
- In a bowl, combine the BBQ sauce and apple cider vinegar with the liquid smoke.
- Toss the brisket cubes in the sauce mixture until well coated.
- Return the coated burnt ends to the smoker or grill for an additional 30 minutes, allowing them to caramelize and develop a crispy outer layer.
