  • Beef brisket point - 500 grams
  • Brown sugar - 30 grams
  • Paprika - 10 grams
  • Garlic powder - 5 grams
  • Onion powder - 5 grams
  • Black pepper - 5 grams
  • Salt - 5 grams
  • Liquid smoke - 5 ml
  • BBQ sauce - 100 grams
  • Apple cider vinegar - 15 ml

Steps

  1. Preheat your smoker or grill to 110°C (225°F).
  2. In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, and salt to create the rub.
  3. Trim excess fat from the brisket point, then coat it liberally with the spice rub, ensuring all sides are covered. Let it rest at room temperature for about 30 minutes.
  4. Place the brisket in the smoker or on the grill and cook for about 4 hours, or until the internal temperature reaches 90°C (195°F).
  5. Remove the brisket from the heat and let it rest for 30 minutes, then cut it into 2.5 cm (1 inch) cubes.
  6. In a bowl, combine the BBQ sauce and apple cider vinegar with the liquid smoke.
  7. Toss the brisket cubes in the sauce mixture until well coated.
  8. Return the coated burnt ends to the smoker or grill for an additional 30 minutes, allowing them to caramelize and develop a crispy outer layer.
