Ingredients

  • Ground buffalo meat - 300 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Buffalo sauce - 60 ml
  • Lettuce leaves (Romaine or Butter) - 4 large leaves
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground buffalo meat to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes.
  4. Stir in the buffalo sauce, and season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.
  5. While the meat cooks, prepare the lettuce leaves by rinsing and patting them dry.
  6. In a bowl, combine the diced avocado, halved cherry tomatoes, chopped cilantro, and lime juice. Mix gently to combine.
  7. To assemble the tacos, spoon the buffalo meat mixture into each lettuce leaf, top with the avocado-tomato mixture, and serve immediately.
