  • Buffalo meat (or beef) - 400 grams, cubed
  • Carrots - 1 medium, sliced
  • Celery - 2 stalks, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Beef broth - 500 ml, low sodium
  • Buffalo sauce - 60 ml
  • Coconut oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cauliflower florets - 200 grams

Steps

  1. In a large pot, heat the coconut oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion is translucent, about 5 minutes.
  2. Add the cubed buffalo meat to the pot and brown on all sides, approximately 8-10 minutes.
  3. Stir in the sliced carrots and diced celery, cooking for an additional 5 minutes.
  4. Pour in the beef broth and buffalo sauce, then add the dried thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.
  6. After 30 minutes, add the cauliflower florets and simmer for an additional 10 minutes until the cauliflower is tender.
  7. Taste and adjust seasoning if necessary before serving hot.
