- Beef broth - 500 ml, low sodium
- Buffalo sauce - 60 ml
- Coconut oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cauliflower florets - 200 grams
Steps
- In a large pot, heat the coconut oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion is translucent, about 5 minutes.
- Add the cubed buffalo meat to the pot and brown on all sides, approximately 8-10 minutes.
- Stir in the sliced carrots and diced celery, cooking for an additional 5 minutes.
- Pour in the beef broth and buffalo sauce, then add the dried thyme, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.
- After 30 minutes, add the cauliflower florets and simmer for an additional 10 minutes until the cauliflower is tender.
