- Buffalo sauce - 100 ml
- Cream cheese - 50 grams
- Chicken broth - 200 ml
- Olive oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Onion, diced - 1 small
- Cheddar cheese, shredded - 50 grams
- Green onions, sliced - 2 for garnish
- Salt - to taste
- Pepper - to taste
Steps
- Cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
- Add the shredded cooked chicken to the skillet, followed by the buffalo sauce and chicken broth. Stir to combine and bring to a simmer.
- Reduce the heat and add the cream cheese, stirring until melted and the sauce is creamy.
- Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. Season with salt and pepper to taste.
- Remove from heat and sprinkle shredded cheddar cheese on top. Allow to sit for a few minutes until cheese is melted.
