  • Cream cheese - 50 grams
  • Chicken broth - 200 ml
  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Onion, diced - 1 small
  • Cheddar cheese, shredded - 50 grams
  • Green onions, sliced - 2 for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the shredded cooked chicken to the skillet, followed by the buffalo sauce and chicken broth. Stir to combine and bring to a simmer.
  4. Reduce the heat and add the cream cheese, stirring until melted and the sauce is creamy.
  5. Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. Season with salt and pepper to taste.
