  • Ground black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Whole wheat tortillas - 2 large
  • Lettuce leaves - 2 large
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 medium, sliced
  • Ranch dressing - 60 ml (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with olive oil, buffalo sauce, garlic powder, onion powder, black pepper, and salt until evenly coated.
  3. Spread the cauliflower mixture on a baking sheet lined with parchment paper and roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly crispy, stirring halfway through.
  4. While the cauliflower is roasting, prepare your tortillas by laying out the lettuce leaves, halved cherry tomatoes, and avocado slices.
