- Whole wheat tortillas - 2 large
- Lettuce leaves - 2 large
- Cherry tomatoes - 100 grams, halved
- Avocado - 1 medium, sliced
- Ranch dressing - 60 ml (optional)
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, toss the cauliflower florets with olive oil, buffalo sauce, garlic powder, onion powder, black pepper, and salt until evenly coated.
- Spread the cauliflower mixture on a baking sheet lined with parchment paper and roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly crispy, stirring halfway through.
- While the cauliflower is roasting, prepare your tortillas by laying out the lettuce leaves, halved cherry tomatoes, and avocado slices.
- Once the cauliflower is done, remove it from the oven and let it cool for a few minutes.
- Divide the buffalo cauliflower evenly between the two tortillas, placing it over the lettuce and topping with cherry tomatoes and avocado.
- Drizzle with ranch dressing if desired, then wrap the tortillas tightly around the filling and serve immediately.
