- Cauliflower - 300 grams, chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Yellow onion - 1 small, diced
- Garlic - 3 cloves, minced
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Buffalo hot sauce - 3 tablespoons
- Olive oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chives - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and chopped cauliflower to the pot, and cook for an additional 2-3 minutes, stirring frequently.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
- Once the cauliflower is tender, remove the pot from heat. Use an immersion blender to puree the soup until smooth. (Alternatively, you can carefully transfer the soup to a blender in batches.)
- Stir in the coconut milk, Buffalo hot sauce, nutritional yeast, salt, and black pepper. Return the pot to low heat for another 5 minutes, allowing the flavors to meld.
- Serve the soup hot, garnished with chopped chives.
