  • Cauliflower - 300 grams, chopped

  • Yellow onion - 1 small, diced
  • Garlic - 3 cloves, minced
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Buffalo hot sauce - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chives - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and chopped cauliflower to the pot, and cook for an additional 2-3 minutes, stirring frequently.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
  4. Once the cauliflower is tender, remove the pot from heat. Use an immersion blender to puree the soup until smooth. (Alternatively, you can carefully transfer the soup to a blender in batches.)
  5. Stir in the coconut milk, Buffalo hot sauce, nutritional yeast, salt, and black pepper. Return the pot to low heat for another 5 minutes, allowing the flavors to meld.
