Ingredients

  • Cauliflower - 1 medium head
  • Olive oil - 2 tablespoons
  • Buffalo sauce - 1/2 cup
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Vegan ranch dressing - 4 tablespoons
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Red onion - 1/4 medium, thinly sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and cut it into bite-sized florets.
  3. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and black pepper until evenly coated.
  4. Spread the cauliflower in a single layer on a baking sheet and roast for 20-25 minutes, or until golden and crispy, flipping halfway through.
  5. Once the cauliflower is done, remove it from the oven and toss it in buffalo sauce until well coated.
  6. To assemble the burgers, spread 2 tablespoons of vegan ranch dressing on each burger bun.
