- Baguette - 1 small (about 150g)
- Ripe tomatoes - 2 medium (about 250g)
- Fresh basil leaves - 10g
- Garlic - 1 clove
- Extra virgin olive oil - 2 tablespoons (30ml)
- Balsamic vinegar - 1 teaspoon (5ml)
- Salt - 1/4 teaspoon
- Freshly ground black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Slice the baguette into 1.5 cm thick slices and place them on a baking sheet.
- Drizzle the sliced baguette with 1 tablespoon of olive oil and toast in the oven for about 5-7 minutes or until golden and crisp.
- While the bread is toasting, dice the ripe tomatoes and place them in a mixing bowl.
- Finely chop the fresh basil leaves and add them to the bowl with the tomatoes.
- Mince the garlic clove and add it to the bowl along with the balsamic vinegar, remaining tablespoon of olive oil, salt, and black pepper. Mix well.
- Once the bread is toasted, remove it from the oven and allow it to cool slightly.
- Top each slice of toasted baguette with a generous spoonful of the tomato mixture.
- Serve immediately and enjoy!
