Ingredients

  • Baguette - 1 small (about 150g)
  • Ripe tomatoes - 2 medium (about 250g)
  • Fresh basil leaves - 10g
  • Garlic - 1 clove
  • Extra virgin olive oil - 2 tablespoons (30ml)
  • Balsamic vinegar - 1 teaspoon (5ml)
  • Salt - 1/4 teaspoon
  • Freshly ground black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the baguette into 1.5 cm thick slices and place them on a baking sheet.
  3. Drizzle the sliced baguette with 1 tablespoon of olive oil and toast in the oven for about 5-7 minutes or until golden and crisp.
  4. While the bread is toasting, dice the ripe tomatoes and place them in a mixing bowl.
  5. Finely chop the fresh basil leaves and add them to the bowl with the tomatoes.
  6. Mince the garlic clove and add it to the bowl along with the balsamic vinegar, remaining tablespoon of olive oil, salt, and black pepper. Mix well.
  7. Once the bread is toasted, remove it from the oven and allow it to cool slightly.
  8. Top each slice of toasted baguette with a generous spoonful of the tomato mixture.
  9. Serve immediately and enjoy!
